Award-winning Duluth baker Carol Marsh likes muffins for a few reasons: “Muffins are versatile. They can be savory, they can be sweet. They can be healthy or indulgent.”

There are a few rules for baking muffins, according to Marsh:

  1. Always use room temperature ingredients.
  2. The order you put the ingredients in matters.
  3. Resist the temptation to over mix.

She shared one of her favorite tried-and-true recipes for white chocolate berry muffins. They can be made the night before and kept in the refrigerator, just expect they might take an extra five minutes to bake.
