Chef Stuart’s Caesar Heirloom Tomato Salad

Chef Stuart Gordon shares his New Year’s Caesar Heirloom Tomato salad.

Caesar Dressing:

  • 1 Piece of Toast
  • 1 Lemon
  • ¼ c Olive Oil
  • 1T Worcestershire Sauce
  • 2T Mayonaise
  • 1T Dijon Mustard
  • 1t Oregano
  • 1t Basil
  • 1t Garlic
  • 1t Black Pepper
  • 2T Grated Parmesan Cheese

4 Heirloom Tomatoes

1 Package (12oz) Cherry Tomatoes

1 Package (1oz) Fresh Basil

Add the dressing ingredients to a food processor. Blend until smooth.

Cut heirloom tomatoes into ¼ inch slices

Cut cherry tomatoes in half

Mix the cherry tomatoes and the heirlooms with half the dressing in a bowl.

Plate the tomatoes and add the rest of the dressing on top.

Rip basil leaves and shave parmesan over the top. 

Optional: garnish with more ground black pepper
