Fruit pizza for Mother’s Day or any occasion

Fruit pizza makes a great, fresh dessert for Mother’s Day, graduation parties, or any special occasion.

Carol Marsh shared her tried-and-true recipe for it, although she offers suggestions for lots of variations.

Her favorite way to make it is on a shortbread crust with a cream cheese spread, fresh or canned fruit, and a glaze.

Crust variations include sugar cookie, chocolate chip cookie, snickerdoodle cookie, or pie crust. The “sauce” could also be Nutella or a simple whipped cream. You can use any kind of fruit, although frozen fruit doesn’t work well, Marsh says, because there’s too much moisture.

She also offered a trick to make sure fruit like apples and pears don’t brown: “You can make a saltwater solution, a half a teaspoon of salt and a cup of water, and soak your slices for 10 minutes. Take them out, rinse them, and then refrigerate them, and they won’t turn brown.”
