What’s Brewing: Uffda Kombucha

Uffda Kombucha has been in business several years and has plans to expand further.

“Kombucha’s just a fermented tea,” Colin Zervas explained. “So we start with a sweet tea base and then we add our starter to it, let it ferment, and then we do a second fermentation with a flavoring. We always use whole, organic fruits.”

There are trace amounts of alcohol, but they are technically nonalcoholic beverages.

Mckenna Dagger said the three main flavors they brew year-round are blueberry, raspberry, and mango. They also do seasonal flavors. For the holidays, they made apple pie and orange cranberry.

They can be found at places like Mount Royal Market, Goat Hill Marketplace, Corktown Deli, Love Creamery, and on tap at breweries like Ursa Minor and Bent Paddle.

Zervas and Dagger are excited to be expanding Uffda Kombucha. They have a new space they’ve been building out for eight months and will be able to quadruple production.
