Home-smoked fish is within reach thanks to ‘Smoke on the Waterfront’

Since 1998, Northern Waters Smokehaus has been a Duluth staple- and now its delectable recipes are within reach thanks to the newly released Smoke on the Waterfront: The Northern Waters Smokehaus Cookbook.

Co-author Mary Tennis explains, “We’ve been talking about it for so long. Probably since the Smokehaus opened.”

It has recipes from the Smokehaus: smoked fish, smoked meat, along with spinoff recipes.

So far, the newly release book has drummed up a positive reception.

“We don’t want to gatekeep, you know?” says co-author Ned Netzel. “We tested the smoked fish recipe on a tricked out Weber Charcoal grill in the middle of the winter to see- I can be done by anyone in just about any circumstances.”
