The restaurant will take over the space that had been occupied by Northern Waters Restaurant in the Mount Royal Shopping Center, 1600 Woodland Avenue.

The Duluth location will serve Vanilla Bean's popular signature dishes including oven baked omelets, Swedish pancakes with lingonberries, Norwegian crepes, pasties, soups, sandwiches, and burgers. It will also have full liquor, beer, and wine service.

Northern Waters Restaurant closed Sunday. After a month of renovations, The Vanilla Bean will open on Feb. 1.

The Vanilla Bean will host a hiring fair on Jan. 8 from 2 to 7 p.m. at the Mount Royal location.

Northern Waters owners Eric and Lynn Goerdt announced their decision to close the restaurant in early December, citing growth and expansion opportunities at their flagship business, Northern Waters Smokehaus. The Smokehaus, located in Canal Park, will remain open and will honor gift certificates from the restaurant.
