Growing food to waste less in the kitchen

Zero Waste Duluth is showing us ways to use our food waste to regrow our produce.

Growing food in your own garden could lead to less waste in your kitchen, says April Hepokoski of Zero Waste Duluth.

Planting seeds collected from last year’s garden is a great way to continue the at-home growing cycle. Hepokoski also suggests a few vegetables that are easy to regrow from scraps, minimizing waste further:

  • Potatoes
  • Carrot tops
  • Beet tops
  • Celery
  • Romaine lettuce

She also created a list of the easiest herbs and veggies to grow:

  • Herbs:
    • Basil
    • Peppermint
    • Oregano
    • Thyme
    • Dill
    • Chives
    • Rosemary
    • Sage
  • Vegetables:
    • Cucumbers
    • Tomatoes
    • Potatoes
    • Zucchini
    • Pumpkin
    • Butternut squash
    • Carrots

Composting is another great way to minimize kitchen waste, even with the scraps you can’t use to regrow veggies.
