We were cooking up some tasty healthy tips on GMN. Friday's segment was all about the ways to enjoy the taste of eating right. Mayo Certified Wellness Coach and Life Coach Berta Lippert joined us to share her protein pancake recipe, and other creative ways for a healthy lifestyle.
Berta has some great tips for folks with picky eaters at home. If you need help getting your little ones to try nutritious foods, Berta says it's a good idea to offer a new variety of things you already have in your home.
An example would be to switch out regular carrots with purple carrots, or exchange the iceberg lettuce for some brighter and more appealing greens.
The main idea is to use foods or recipes that you already use, but with a healthy twist.
Simple Protein Pancake Recipe:
1 banana, mashed
1 egg, or 1/4 cup egg white
1/4 cup oatmeal
1/4 cup of plain nonfat Greek yogurt
Last but not least, Berta has a great way to sneak in the protein - protein powder! In this segment, she uses brown rice protein powder.
Aside from being healthy, this recipe is also flexible. Berta says you can make modifications as needed if you're vegan or have other nutritional needs/preferences.
Spices: For these pancakes, Berta uses apple pie spice mixed with cinnamon. She's also used pumpkin pie spice and recommends experimenting with what you like the most.
Once you've mixed your batter, it's time for the griddle!
And last but not least, garnish your protein pancakes with fresh fruit and top with agave nectar in place of syrup.
This recipe will serve one, so multiply accordingly.
