Thai Chicken Wings

Ingredients for chicken wings:
12-15 chicken wings, disjointed and cut in to drumsticks and paddles or lollipops.
Ingredients for marinade
1 tablespoon minced garlic
1 tablespoon minced ginger or galangal (Thai ginger) or a mix of both
2 Tablespoons of chopped tender lemongrass
1 Tablespoon fish sauce
Juice of one lime
1 teaspoon palm sugar or brown sugar
2 Tablespoons of oyster sauce
1 teaspoon Sriracha (Thai hot sauce with a rooster on the bottle)
2 Tablespoons Rice vinegar
Mix all ingredients and add chicken wings. Marinate for at least 2 hours and overnight if possible.
Grill over hot grill, baste with a brush once or twice on each side with remaining marinade until wings are sticky and brown. Transfer to foil if they start to brown too much. Cook 15- 30 minutes depending how hot your grill is. Wings are done when juices run clear.
