Creole Dish with Sausage and Peppers

Creole Sausage and Peppers

One of my favorite tailgating dishes, easy to assemble and tastes great. Serve with brown rice or Linguini pasta for a filling halftime favorite.

 

Serves 6-8

Ingredients:

1Tablespoon butter

2 green bell peppers

1 cup roasted red bell peppers

1 large onion, sliced

2 Tablespoons garlic, minced

1 Tablespoon Dry Italian Seasoning

1 Teaspoon Cajun seasoning

4-5 bay leaves

3 pounds Italian Sausage, cooked and sliced

3 large tomatoes (2 cups)

2 cups chicken stock

Salt and pepper to taste

Instructions:

Melt butter in large Dutch oven, add green peppers, onions and red peppers to cook until soft, about 5 minutes. Add garlic and seasonings, stirring to get any brown bits from the bottom of the pan. Add Italian sausage, tomatoes and chicken stock. Simmer until desired thickness, season with salt and pepper. Sauce will be thin, but full of flavor.
