Hanging Horn Village - French Quiche

Quiche Lorraine

Preheat Oven: 325*

3 Large Eggs

12 oz Heavy Cream or Half & Half

1 Prepared Pie Crust

to taste Salt & White Pepper

2 T Shredded Swiss Cheese

2 T Shredded Parmesan Cheese

2 T Red Onion, finely chopped

1/4 C Grape Tomatoes, quartered

1/4 C Fresh Asparagus, chopped

1. Carefully arrange parmesan cheese, red onion, tomatoes & asparagus in the prepared pie crust.

2. Whisk together egg & cream. Gently pour the mixture into the pie crust being careful not to end up with all the ingredients on one side!

3. Sprinkle the top with parmesan cheese. Bake for 50-55 minutes, til puffed and golden brown.

Nicoise Salad

Mixed Greens for the base of the salad.

Arrange the following ingredients on top of the greens:

5-6 Grape Tomatoes

5-6 rings Red Onion

1-2 Baby Red Potatoes, boiled and sliced

8-10 Baby Green Beans, blanched and chilled

3-4 Small Green Olives

1 Egg, hard boiled and quartered

1 Can Tuna, drained

Top with your favorite vinaigrette.

Serve with a fresh baked baguette.
